Chickpea Blondies

I feel like cauliflower has taken over chickpeas recently, so it’s time we bring back this oldie but goodie.

This recipe is simple & delicious. I make a bunch and they store well in the freezer for quite a while (very important to have some healthy-ish desserts on hand). Now time for you to make your own!

WHAT TO GRAB:

  • 1 can chickpeas, rinsed and drained

  • 1/4 cup maple syrup (or agave, honey, whatever you’d like)

  • 1/2 cup nut butter of your choice (I like PB here)

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 tbsp vanilla extract

  • As many chocolate chips as your heart desires

OPTIONAL ADD INS:

  • Coconut flakes (unsweetened)

  • Chopped pistachios, walnuts, almonds, etc.

  • Chopped dried fruit (think craisins, cherries, blueberries)

  • Cinnamon & raisins

  • Orange zest

WHAT TO DO:

  • Preheat oven to 350 F

  • In a mixer, combine everything except the chocolate chips and baking powder

  • Once all combined, mix in the chocolate and powder

  • Put in a (sprayed) baking dish and smooth so it’s even distributed

  • Bake for ~20-25 minutes (depends on your pan size)

  • Place the pan in the fridge for at least 30 minutes to cool

  • Cut into square and enjoy :)
