Pumpkin Blender Muffins

A fall twist on my favorite blender banana bread :)

What to grab

  • 2 very ripe bananas

  • 1/2 cup pumpkin puree

  • 2 eggs

  • 1 tbsp coconut oil

  • 2 tbsp maple syrup

  • 2 tsp vanilla extract

  • 2 tsp cinnamon

  • 1.5 cup oats

  • Pinch of salt

  • optional bit of almond milk if you need to thin it out

  • 1 tsp baking powder

    -chocolate chips for toppings!

What to do

  1. Set oven to 350F

  2. In a blender (or large food processor), add bananas, eggs, pumpkin puree, coconut oil, vanilla extract, maple syrup, cinnamon & a tiny pinch of salt. Process to combine all the ingredients.

  3. Once all the liquid in combined, slowly add in the oats (1/2 cup at a time) until it’s a batter consistency. You can add a splash of almond milk if you need to thin it out. 

  4. When it’s all done add the baking powder and mix together. 

  5. Spray muffin tins and pour batter evenly. Top with chocolate chips!

  6. Bake for ~20 minutes or until fully cooked
