Applesauce Bran Muffins

The dreamiest bran muffin recipe. Served best warm with a bit of nut butter on top :)

Recipe makes ~12 muffins

What to grab:

  • 1 cup wheat bran

  • 1 cup whole wheat flour

  • 1/4 cup ground flaxseed

  • 1.5 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1/2 cup applesauce

  • 1/4 cup almond milk (unsweetened vanilla is my preference)

  • 1 egg

  • 1/8 - 1/4 cup honey (I personally use 1/8 cup or 2 tbsp, but I recommend starting with 1/4 cup and seeing how you like it. Can always sub sweetener here)

  • 1 tbsp coconut oil, melted (microwave for ~20 seconds)

  • 1/4 cup chopped walnuts (can sub nuts)

  • 1/4 cup raisins (can sub fruit)

What to do:

  1. Set oven to 400 F

  2. In a bowl combine dry ingredients (wheat bran, whole wheat flour, flaxseed, baking powder, baking soda, cinnamon and salt)

  3. In a separate large bowl combine wet ingredients (applesauce, almond milk, egg, honey and coconut oil)

  4. Slowly add dry ingredients to the large bowl with wet ingredients. Mix until combined

  5. Fold in walnuts and raisins

  6. Spray muffin tin well and pour batter into 12 evenly distributed muffins

  7. Bake for ~15-20 minutes or until a toothpick comes out clean
