
Everyday Egg Salad
What to grab:
2 organic pasture raised eggs
1/2 small avocado
1 tsp dijon mustard (amount depends on preference)
Salt, pepper, chili flakes to taste
What to do:
Place a pot with water on the stove. Drop in 2 eggs. Place heat on high and boil eggs for 15 minutes
Let eggs cool and peel off shell
In a bowl, combine eggs, avocado and dijon mustard. Use a fork to mash together
Season with salt, pepper & chili flakes
Eat on a bed of greens or a high fiber bread & ENJOY
