Zucchini Pancakes

WHAT TO GRAB:

  • ~1 cup spiralized (or shredded) zucchini (about 1 small zucchini)

  • 2 tbsp flour (whole wheat, almond, coconut, whatever you’d like)

  • 1 egg, beaten

  • 1/2 tsp baking powder

  • Salt, pepper, garlic powder to taste

  • Avocado oil to cook

Optional toppings:

  • Plain Greek yogurt

  • Scallions

  • Applesauce

WHAT TO DO:

  1. Make sure to remove as much water from the zucchini as possible (a cheesecloth works best, if you don’t have one, try a dishtowel)

  2. Combine spiraled zucchini, almond flour, egg, baking powder and salt/pepper/garlic powder

  3. Heat a small amount of oil in a large pan (spray works too, just make sure the pan is covered)

  4. Drop small amounts of zucchini mixture onto the hot pan (keep at about medium-high heat)

  5. Cook until golden
